Day 2 of Vegan Reboot. Really enjoyed my "green lunch" Yummy. Wish the fritters got more color, next time a different pan and a bit more oil. So we have 2 fresh pea and tofu fritters, with a baby kale and cucumber salad along with mashed avocado with lemon and garlic. Added the cherry tomatoes for color...served on my favorite lunch plate, makes it feel special.
