What dressing do you put on this? Looks great!!

The dressing is a miso tahini dressing. 2 tablespoons tahini, a teaspoon of miso, and enough water to thin it out to dressing consistency. As predicted, I couldn't finish it. My husband got the leftovers when I got home

The dressing packs a serious caloric wallop, but it counts as a serving of nuts/seeds, and I try to work in a serving every day

Looks yummy! Good idea on the dressing, going to try that. Nuts get a bad rap in dieting. We need the nutrients they provide. Very healthy in moderation.

It was pretty tasty, buenitabishop 😊 I had wheat berries, edamame, corn, peas, carrot, zucchini, green onion, and fresh parsley in it. Too much food, but my husband enjoyed what I didn't eat when I got home. Grain and bean salads are becoming a go to lunch for me, but I'm still figuring out how much to fix

@ Writingwyo do you cook the vegetables before you make the salad? Or are these raw vegetables?

The wheat berries were cooked, of course, but you could sprout them instead if you wanted. I've done them that way, too. The edamame, corn and peas were all f4om frozen that I microwaved. Everything else was raw.
