per Ancel Keys- who many consider the Godfather of the Mediterranean diet. Olive does not really confer any benefits in terms of cardiovascular health .Except that it preferable to butter ,lard, and veg. oils, which may have negative effects. If you are going to use it-use EVOO. This is where the oil is pressed directly from the olive. Anything else is olive oil which is diluted with other 'stuff', or further processed. The kicker -there is not rigorous testing of labels and one study found that over 75 % of EVOO's were not , in fact, evoo!

I'll look him up. Med diet is one of the best health wise in my opinion. Hey that's crazy that food manufacturers are held to such low standards for labeling. I only use extra virgin (well, as labeled lol), and organic. Or coconut oil on occasion. Butter hardly ever. The rest I dont use. When baking there are plenty of other oil substitutes.
