Glucose Reading Before Lunch: 97 Yay! Forgot to test this morning. No sweet potatoes or apples for me today. Salad w/chicken for lunch and probably dinner, too. I'll add some blueberries in Greek yogurt tomorrow and see how that affects my blood sugar. Oh, I am trying a raspberry vinegar in my salad today, so I guess I'd better check my bs an hour after lunch.

One hour after lunch glucose: 120. Must be the raspberry vinegar. Darn it!

One hour after eating: under 140 mg/dl (7.8 mmol/l)

Two hours after eating: under 120 mg/dl (6.7 mmol/l)

If you can do better than this, go for it. Normal people rarely go over 120 mg/dl ever and are usually under 100 mg/dl at 2 hours after eating.


I guess a 120 reading an hour after eating is acceptable.

I'm feeling great and have more energy than I previously had!

Before breakfast glucose: 125, a bit high. Maybe the result of the 44 carbs I had for dinner last night, which included half an apple and 3 oz of sweet potato.

BREAKFAST 9:00AM: The only part of breakfast I don't look forward to is the 4 oz chicken breast. So dry and unappetizing. I need to find a way to make my morning protein tastier. If anyone is reading this, I'm open to suggestions:-)

NOTE: While eating my chicken, I decided to tear it into pieces and mix it into some Greek yogurt. That helped a lot! It does bring my breakfast carbs up to 27 (I'd rather keep them below 10 at breakfast), but at least I don't have to choke down that chicken:-)

1:00PM LUNCH: Glucose level is 124! Why so high? I guess I really do need to cut back my carbs. I'll do that starting tonight. For now, I'll eat the salad I brought for lunch, including (sigh) that delicious bit of sweet potato.
