So, this is lunch... I hate estimating. I had 1/3rd of this. Greek Style eggplant. What is in it?
Olive oil
carrots
eggplant
beans ( my addition, not in the recipe )
mushrooms ( my addition, not in the recipe )
diced tomatoes
roasted peppers
vegetable broth
I ate about 2 cups of it. I can't believe I ate eggplant. I don't like eggplant, but I have t do what I have to do.... I am looking forward to my one meal a week where I eat meat, for sure! :)

Did the scale just lie to me?
Today is day 1 of my new plan to only weigh myself on Mondays... I have been eating a 95% vegetarian diet for 6 months. The first 4 months I lost no weight at all - too many simple carbs, I think. In the last 2 months I went from 282, down to 257. Nice. 25 pounds gone. That was Friday - 3 days ago.
Saturday was the same weight. I did not weigh myself on Sunday. ( yesterday )
Today, I stepped on the scale and I was 249.5,,, so, I lost 7.5 pounds since Saturday? Makes no sense. But I will take it.

Is there a way to just record calories without naming what you ate? I have a habit of forgetting what I ate, and can't properly log my food, so I was just hoping that when that happens I could just add calories to my food log.
A good day today... 1513 calories and SO MANY VEGETABLES!
Tomorrow starts my new weight checking plan... going to try SO HARD to just weigh myself on Mondays.

I wish I could do like so many of you do.... avoid the scale... but I just can't... I weigh myself every single day. I know that at about 10:15 AM is when I weigh the least.... and 8 PM is when I weigh the most. Now, today, I was not really trying to stay at 1190 calories, but I feel like I don't need more food today... probably means I will be 2 pounds heavier tomorrow.... ;)
I did drink my 100 ounces of water today... which is always a goal of mine. And I kept salt intake way down today, so hopefully tomorrow morning is actually a good morning. I would love to REALLY exercise, but I am waiting on finding out if I need both knees replaced or just one.... terrified by the thought of just one... 2 might just, well, I don't know.....

what a day. woke up with a nasty sinus headache. That lasted until 2PM. I was feeling great and then nausea set in until 10 PM. I ate horribly. Look at all those wasted calories from bread and pasta.
