The salad I just made was INSANE. So many ingredients! Fifteen ingredients, I think? This is always what happens the day after I go grocery shopping. I spend my entire lunch break cutting fruits and vegetables and make a huge salad involving every piece of (veggie) produce I bought. It's tasty and goodness, it's healthy. Had I not made an avocado chipotle ranch (I had to. I had to. Cinco de Mayo!) and added avocado to my salad it would have been about 150 calories...and it made a mound on a dinner plate! A big plate!
I won't have to eat before yoga now, I bet.

I'm also going to weigh myself in two days. I'm retaining water quickly nicely right now, if you catch my drift.

I admit that I am NOT filling in my calories for yesterday. That'd be a stupid waste of time. My family doesn't sit around a big round table and pass dishes. It's all a very big pot-luck/buffet style and everyone brings a different dish to pass, maybe two. There was wayyyy too many things to eat, but luckily for me my family decided to keep it fairly healthy for once. My plate included:
- Two small slices of ham
- Small scoop of mashed potatoes (gravy on the side)
- Steamed carrots (they're usually caramelized)
- Fresh corn (usually creamed)
- Fresh strawberries/grapes/cantaloupe (usually tossed with vanilla pudding)
- Celery, radishes, broccoli, cauliflower, all raw
- Two devil egg halves, which I can't deny because my grandma DIES THE EGG WHITES so they look like colored eggs!
And for dessert I had a small slice of double lemon cheesecake. No Easter candy. :) I didn't eat a single bit yesterday.
I skipped the cookies and crackers we had to munch on before the food was ready, green bean casserole, yams, chicken, and rolls. Speaking of that, I think I've done a remarkable job of taking excess bread out of my life. If it's a just-to-have with the meal, like to go with the meat and potatoes or a pasta, I haven't eaten it. Yay!
I'm pretty proud of myself.

My stomach looks great today.
It's obvious that I am gaining some muscle. I weigh two pounds more than I have at my lightest while being on this site and yet my stomach and thighs look better today than that time four weeks ago. I'm okay with being a bit heavier than I want if I still look good. People can see a six pack but they can't see that I weigh three or four pounds than they expect.
I am done with my college class, Fridays, and another extra project. I'm down to two clients and have opened some time in my life. This will allow me to have less stress, more time for me, and more time to work out! I am excited to have proper time to exercise again!
ALSO: I'M AN AUNNNNT! Well, of sorts. My best friend had a little one late Friday night. She's gorgeous. I can't wait to hold her. :)
